Hello everyone, and welcome to episode six of Safe Eats with Abby! I recently turned 18, and thus, I wanted to share a birthday treat that my family has been making for many years now. The dessert itself is a less traditional option for those who have food sensitivities like me, so tune in — it might not be what you expect!

Ingredients:

  • 1 box gluten-free graham crackers
  • 11 oz plant-based cream cheese
  • 16 oz dairy-free whipped topping (I use So Delicious CocoWhip)
  •  ⅓ cup sugar
  • Separate 1 cup sugar
  • ½ cup margarine or dairy-free butter, melted
  • 1 package lime Jell-O
  • 1 tsp. vanilla extract
